Meredith College invites qualified candidates for a full time non-tenure-track, faculty position as Instructor of Professional Practice or Assistant Professor of Professional Practice in Food and Nutrition and Nifong Nutrition Lab Director to begin August 2025. This position involves a blend of teaching, curriculum development, mentoring/advising, and laboratory oversight.
Duties:
Faculty Responsibilities:
- Eighteen credit hour teaching load, including undergraduate and graduate courses in Food Service Management, Food Science, Culinary Medicine, and/or other didactic areas in food and nutrition.
- Incorporate hands-on learning activities and practical applications in lab sessions to enhance student engagement and deepen understanding.
- Model evidence-based practices and integrate current research into curriculum content to enhance students’ practical knowledge and skills.
- Foster a collaborative, inclusive, and supportive learning environment for students.
- Participate in ongoing assessment activities required for ACEND accreditation.
- Active involvement within the department, contribution to program assessment, student advising and mentoring, college-wide service, and professional involvement are expected.
Nifong Lab Director Responsibilities:
- As Director of the Nifong Nutrition Professional Kitchen Lab, the faculty member will ensure that the lab functions as a safe and dynamic educational space where students gain practical experience in nutrition, food science, and food service management.
- Manage the weekly operations of the Nifong Nutrition Kitchen Lab, including equipment, supplies, safety and sanitation protocols, and scheduling.
- Collaborate with faculty and staff to create a safe and effective learning environment in the Nifong Nutrition Kitchen Lab and facilitate lab experiences in various food and nutrition courses.
- Supervise lab personnel, including lab assistants and/or graduate students, to support lab activities.
- Perform other miscellaneous tasks within the department as identified by the Program Coordinator, Graduate Director, Department Chair, and/or Dean.
Qualifications:
- Master’s degree in Nutrition Science or Dietetics is required as an Instructor. A Terminal degree is required as an Assistant Professor. RD credential required.
- At least three years of professional food service management or equivalent (food systems or culinary) experience is required.
- Strong commitment to experiential learning and student success.
- The successful candidate will provide evidence of initiative, maturity, professionalism, attention to detail, excellent organizational ability, time management, and interpersonal skills, which include high-quality oral and written communication skills.

The Department of Nutrition, Health and Human Performance (NHHP) is in the School of Education, Health and Human Sciences with majors & minors in Food and Nutrition; Health, Exercise & Sport Sciences; licensure in Physical Education; and an extensive physical education activity service program. NHHP offers an M.S. degree in Nutrition with tracks in Dietetics (DPD and ADNT accredited programs), Community Nutrition, and an accredited Dietetic Internship program.
